This delicious recipe packs a gigantic flavor punch, and while itβs very easy it demands a lot of attention. Everything is cooked in one pot, so thatβs nice.

Ingredients
2 Tbsp Olive Oil
1 Lbs. Hot Italian Sausage (You can use sweet it preferred)
1 Medium Onion Diced
4-6 Cups of Low Sodium Broth
A bunch Arugula
1 Lbs. Orecchiette
Salt to taste
Directions
- Take the sausages out of their casings.
- Dice your onion.
- Add the two tablespoons of olive oil to your pan over medium low heat.
- When hot add your onions. SautΓ© those until they are translucent.
- Add your sausage into the pan, breaking it up. Cook until brown. This takes 5-15 minutes depending on how brown you cook them. Just make sure that they are cooked through.
- Add the broth. Bring that to a simmer and add the pasta. Stir them in well. They like to stack into each other so stay on top of then and keep separating them. Stir every few minutes.
- Test the cook on the pasta here and there. If needed add more chicken broth.
- Finally when the broth is cooked down and the pasta is ready, remove from heat and add the arugula string until it wilts.
- Plate it up, sprinkle with parmigiana and serve.
