Orecchiette with Sausage & Arugula – One Pot Pasta Delight πŸ«•

This delicious recipe packs a gigantic flavor punch, and while it’s very easy it demands a lot of attention. Everything is cooked in one pot, so that’s nice.

Ingredients

  • 2 Tbsp Olive Oil

  • 1 Lbs. Hot Italian Sausage (You can use sweet it preferred)

  • 1 Medium Onion Diced

  • 4-6 Cups of Low Sodium Broth

  • A bunch Arugula

  • 1 Lbs. Orecchiette

  • Salt to taste

Directions

  • Take the sausages out of their casings.
  • Dice your onion.
  • Add the two tablespoons of olive oil to your pan over medium low heat.
  • When hot add your onions. SautΓ© those until they are translucent.
  • Add your sausage into the pan, breaking it up. Cook until brown. This takes 5-15 minutes depending on how brown you cook them. Just make sure that they are cooked through.
  • Add the broth. Bring that to a simmer and add the pasta. Stir them in well. They like to stack into each other so stay on top of then and keep separating them. Stir every few minutes.
  • Test the cook on the pasta here and there. If needed add more chicken broth.
  • Finally when the broth is cooked down and the pasta is ready, remove from heat and add the arugula string until it wilts.
  • Plate it up, sprinkle with parmigiana and serve.
